The grapes for this wine were hand selected from individual blocks of Lewis Vineyard. The grapes were pressed whole cluster, then the juice was pasteurized before fermentation in order to achieve the Mevushal Kashrut status. After pasteurization the juice was racked into stainless steel tank and fermented slowly in a low temperature, to achieve the beautiful aromas and flavours in the wine.
Description
The grapes for this wine were hand selected from individual blocks of Lewis Vineyard. The grapes were pressed whole cluster, then the juice was pasteurized before fermentation in order to achieve the Mevushal Kashrut status. After pasteurization the juice was racked into stainless steel tank and fermented slowly in a low temperature, to achieve the beautiful aromas and flavours in the wine. The wine will be aged on the lees, in order to extract and integrate all the flavors in the wine, then racked off the lees and crafted into a unique and enjoyable wine.
This wine is Mevushal Kosher wine under the supervision of Ottawa Vaad Hakashrut
Tasting Note: Elegant acidity with a sweet surprise, notes of citrus, tropical fruit, guava and honey.
Recommended drinking 2022-2025.
